Shoyu Ramen is one of the most popular types of ramen in Japan. Its flavor comes from soy sauce, a hot broth, soft noodles, grilled meat, and beautiful toppings! Now, let’s try making Shoyu Ramen with this new method!
Ingredients Needed
For the Broth:
🥩 Chicken or Beef Bones – 500g
💧 Water – 1.5L
🌿 Coriander Seeds – 1 tablespoon
🧄 Garlic – 3-4 cloves
🫚 Ginger – 1-inch piece
🐟 Katsuobushi (Bonito Flakes) – ½ cup
🌊 Kombu (Seaweed) – 1 piece
🥢 Soy Sauce – ½ cup
⚫ Peppercorns – 1 teaspoon
For the Noodles:
🌾 All-Purpose Flour – 2 cups
🍚 Baking Soda – ½ teaspoon
💦 Hot Water – ½ cup
For the Toppings:
🍖 Chashu (Slow-Cooked Pork Belly or Chicken)
🥚 Ajitsuke Tamago (Marinated Egg)
🌿 Scallions (Spring Onions)
🦑 Nori (Seaweed)
🎋 Menma (Bamboo Shoots)
How to Prepare
- Making the Broth:
- Clean the meat bones well and bring them to a boil in water.
- Add garlic, ginger, katsuobushi, kombu, and peppercorns, and let it simmer on low heat for 2-3 hours.
- Add soy sauce, and let it simmer for a bit longer.
- Once ready, let the broth settle and keep it warm.
- Making the Noodles:
- Mix flour, baking soda, and hot water to form a soft dough.
- Let it rest covered for 1 hour to set.
- Afterward, roll it out and cut the noodles into your desired shape.
- Boil the noodles for 2-3 minutes in hot water and drain them.
- Preparing the Toppings:
Chashu Meat – Marinate and slow-cook or bake the meat.
Eggs – Boil them for about 7-8 minutes and marinate them in a mix of soy sauce, sugar, and pepper until they take on a golden color.
Nori, Scallions, and Menma – Chop them as needed.
- Final Assembly:
- Place the noodles in a bowl.
- Add the hot broth over the noodles.
- Arrange each topping beautifully on top.
