Ingredients
Mascarpone – 150g
High-quality lemon curd – 80g
A pinch of vanilla powder (or seeds from half a pod)
White bread slices – 8 (crusts removed)
Strawberries – 200g (hulled and thinly sliced)
Method
Mix the mascarpone, lemon curd, and vanilla together.
Spread the mixture over 4 slices of bread.
Neatly arrange the sliced strawberries, then cover with the remaining 4 slices.
Cut into thin triangle shapes to serve.
