- Prepare the Yeast Mixture: In a small bowl, combine warm water, sugar, and yeast. Stir it up and let it sit for 5-10 minutes until it becomes frothy. This means the yeast is activated and ready to go.
- Make the Dough: In a large mixing bowl, combine the flour and salt. Gradually add the yeast mixture and olive oil (if using) to the dry ingredients. Stir everything together until the dough starts to form.
- Knead the Dough: Turn the dough out onto a lightly floured surface and knead for about 8-10 minutes until it becomes smooth and elastic. If it’s too sticky, just add a little extra flour as you go.
- Let the Dough Rise: Place the dough in a lightly oiled bowl and cover it with a damp cloth. Let it rest for about an hour, or until it has doubled in size.
- Shape the Pitas: Once the dough has risen, punch it down gently to release the air. Divide it into 8-10 equal-sized balls. Roll each ball out into a flat, round shape about 6 inches in diameter.
- Cook the Pitas: Heat a cast-iron skillet or a non-stick pan over medium-high heat. Once it’s hot, place one pita at a time in the pan. Cook for about 2 minutes on one side, until bubbles start to form. Flip it over and cook for another 1-2 minutes, or until it puffs up and has golden brown spots.
- Serve Warm: Once the pita is cooked, remove it from the pan and place it on a clean towel to keep it warm. You can serve it right away, or let it cool down a little before serving.
Tips for Perfect Pita Roti:
Make sure the water is warm, but not hot, to activate the yeast.
If you don’t have a skillet, you can bake the pitas at 475°F (245°C) on a baking stone or baking sheet for 5-7 minutes.
For extra soft pitas, add a little more olive oil to the dough.
