Corian kimchi noodles recipe

What you’ll need:

  • 1 packet of instant noodles (ramen works great)
  • 1/2 cup chopped kimchi
  • 1 tablespoon sesame oil
  • 1 tablespoon soy sauce
  • 1 teaspoon gochujang (or sriracha if you like it spicy)
  • 1 teaspoon sugar (optional, but it balances the heat)
  • 1/2 cup water (or more if you like it soupy)
  • Fresh coriander (cilantro), chopped (for garnish)
  • 1 boiled egg (optional, adds richness)
  • Green onions (optional, for garnish)

How to make it:

  1. Cook the noodles: Boil them according to the package instructions. Drain them, but save a little of the cooking water if you want a brothier dish.
  2. Sauté the kimchi: In a pan, heat up the sesame oil over medium heat. Add the chopped kimchi and cook for about 2-3 minutes until it’s fragrant and a little crispy.
  3. Add the sauces: Stir in soy sauce, gochujang (or sriracha), and sugar (if you’re using it). Mix everything together to combine the flavors.
  4. Combine noodles with kimchi: Add the cooked noodles to the pan with the kimchi. Pour in some of the saved noodle water (or just plain water) to make a bit of broth. Stir everything to coat the noodles with the delicious kimchi sauce.
  5. Garnish: Top it with chopped coriander (cilantro) and a boiled egg for extra richness. Green onions are optional but a nice touch!
