For the Pastry (Outer Layer)
All-purpose flour – 2 cups
Warm oil – 2 tbsp
Salt – 1/2 tsp
Water – As needed (to make a smooth and soft dough)
For the Filling
Boiled and mashed potatoes – 3/4
Boiled green peas – 1/2 cup
Cumin seeds – 1 tsp
Black pepper powder – 1/2 tsp
Red chili powder – 1/2 tsp
Garam masala – 1/2 tsp
Ginger-garlic paste – 1 tsp
Salt – As per taste
Chopped coriander leaves – A little
Oil – For frying
How to Make It?
- Preparing the Pastry
- In a bowl, mix all-purpose flour, salt, and oil.
- Gradually add water and knead into a smooth, soft, and lump-free dough.
- Cover and let it rest for 30 minutes.
- Making the Filling
- Mash the boiled potatoes lightly.
- Heat some oil in a pan and add cumin seeds.
- Add ginger-garlic paste and sauté for a few seconds.
- Then, add green peas and mix well.
- Now, add mashed potatoes, black pepper, red chili powder, garam masala, and salt.
- Mix everything well and finally add chopped coriander leaves.
- Shaping and Frying the Samosas
- Divide the dough into 6-8 equal portions.
- Roll each portion into a thin circle, like a roti, and cut it in half.
- Take one half, fold it into a cone shape, and seal the edges using water.
- Fill it with the potato mixture and seal the opening tightly.
- Deep fry in medium-hot oil until golden brown and crispy.
