
Sri Lankan Mango Chutney – A Perfect Balance of Sweet & Spicy

Ingredients:
- 2 ripe mangoes (chopped into small pieces)
- 3 tbsp sugar
- 1 onion (finely chopped)
- 2g garlic (minced)
- ½ tsp turmeric powder
- 1 tsp chili powder
- 2 tbsp white vinegar
- 5 curry leaves
- 1 small cinnamon stick
- Salt to taste
- 2 tbsp coconut oil

- Stir continuously while the mixture cooks down, allowing the flavors to combine. Add salt to taste.
- Lower the heat and let it simmer until the chutney thickens to a rich, jam-like consistency.
- Once done, transfer it to a clean jar and let it cool before serving.
